VINIFICATION

Destemming and soft pressing, without pressing the berries, in order to obtain only the most precious and balanced juice of our grapes, the flower must. First fermentation in steel tanks at a controlled temperature and aging for about 9 months. Second fermentation in the bottle and subsequent refinement for at least 48 months on the lees. The remuage is done manually.
