Description: Cocchi seeks with TOTO CORDE the expression of the centennial Piedmontese tradition of the classic method with the structure and power of the grapes grown in Alta Langa. TOTOCORDE is our flag label of the Alta Langa DOCG. It is a classic cuvée of Pinot Noir and Chardonnay grapes. Its quality comes from flawless grapes, a competence in the production of sparkling wines and a long fermentation for at least 48 months in our historic cellars. Grapes: 80% Pinot Nero, 20% Chardonnay. Harvesting of the grapes by hand in boxes. Vinification and sparkling: The yield is contained in fact the presses, filled with 4,500 kg of grapes, give 2,650 liters of Pinot Noir must or 2,800 liters of Chardonnay. The first fermentation takes place in steel vats for three weeks, at the end of which the wine is stored in the cold to facilitate the sedimentation of the deposits. The cuvée is created at the end of winter by combining Pinot Noir and Chardonnay from the same vintage. The second fermentation takes place in the stacked bottles and is completed with a long maturation in the cool and dark for 4 years. The remuage is strictly manual on wooden pupitres with dégorgement à la glace. A small dosage of liqueur dexpédition is added to perfect a well-balanced brut. It may contain sulphites. Alcoholic content: 12%. Tasting: A beautiful straw color accompanies a very broad aromatic spectrum that pushes towards notes of candied citrus. In the mouth, thanks to the characteristic sapidity of the Alta Langa, it is particularly rich in matter with the same aromatic notes of the nose and fine citron flavors.
