PARUSSO METODO CLASSICO - Always inclined to rediscover old traditions, the Nebbiolo-based Parusso Metodo Classico Spumante is a wine that is part of the centuries-old history of Italian and Piedmontese sparkling winemaking. In fact, in Piedmont, the cradle of Italian sparkling wines, the first written document that mentions the sparkling process of the Nebbiolo grape appears. It dates back to 1787 when the future American President Jefferson drank a Nebbiolo red wine, finding it lively as a Spumante. From that moment on, more and more traces can be found on the use of Nebbiolo as a sparkling base. We also read about various tests of Nebbiolo sparkling wine in the Castello della Volta di Barolo, in the Royal Estate of Pollenzo and in the Castello di Novello in the first half of the 19th century. Today we want to follow up on this story by presenting our Parusso Metodo Classico. This Spumante is produced starting from Nebbiolo grapes, harvested in mid-September and left to rest in the cellar for a few days at controlled temperature and humidity. Subsequently the grapes are vinified in white. The best part of the must is used, called flower must. The fermentation of the must takes place with indigenous yeasts. The draft is then carried out by adding the yeasts to the mass and bottled to obtain the Presa di Spuma. The Spumante ages in the cellar with temperature control on its lees for about 36 months. During this period, the wrist flick is performed manually. The disgorgement is then carried out, the date of which is shown on the label. The Spumante Parusso Metodo Classico is a wine of great freshness, finesse and elegance. Very fine and persistent bubbles bring to the nose hints of ripe fruit, apricot, raspberry and strawberry. On the palate the acid freshness is supported by the tannic structure conferred by the Nebbiolo grape which guarantees a pleasant drink and an excellent evolution over time. It may contain sulphites.
