GRATIN

Gratin is also called toma brusca (acidic) which does not really correspond to the flavor because it is very delicate. This name derives from the fact that the milk is left to stand until the established degree of acidity is reached. This process, often used by herdsmen, seems to have been particularly used in the Waldensian communities for the conservation and transportability of the cheese derived from it.
