BARBERA SERRA DE 'GATTI 2019 DOC 75cl

"Serra dè Gatti" is a wine that comes only from Barbera grapes grown respecting the principles of biodynamics. The harvest takes place at the end of September and the grapes are harvested by hand. Subsequently the fermentation with maceration on the skins lasts about 18 days. Once the wine has been drawn off, it rests for about six months in second passage barriques. After bottling, another 4 months pass before the wine is put on the market. The color is intense ruby with violet reflections while its aromatic profile is characterized by an invasive fruity scent with spicy notes, the mouth is supported by a gratifying acidity and the tannin is sinuous and well defined. The producer: Cascina Val del Prete takes its name from the exiled bishop of Asti who lived there in 1850. In 1977 Bartolomeo Roagna and his wife Carolina bought the farm in Val del Prete and began their agronomic conversion of the land, thus replacing the fields of wheat with vineyards creating a splendid natural amphitheater. Today the company is managed by the eldest son Mario, a skilled winemaker and great interpreter of a territory rich in history and winemaking tradition. The pairing: Excellent in the company of important dishes, such as braised red meats, and seasoned and spicy cheeses. The service: It is advisable to open the bottle a few minutes before. It should be served at 18-20 degrees centigrade. The optimal glass is a clear, smooth and colorless crystal goblet.
