Description

The milk is produced in the area of the Roero hills that is why it is of the hill (dla culin-a in Piedmontese). The freshly milked milk arrives fresh in the dairy and once filtered, it is heated to coagulation temperature and processed slowly without violent heat treatments but maintaining all the good characteristics of raw milk. The particular traditional processing gives a good eye to the dough which is placed in molds with natural linen cloths, turned several times and left to rest in a cool place all night. The completely manual dry salting helps to obtain a balanced taste and precedes the aging on wooden boards which allows to develop more and more intense aromas and tastes. By cutting the shapes you immediately notice the marked holes, a clear sign of the presence of lactic flora in raw milk. In the more seasoned forms the taste becomes more marked and rich in intense nuances.
