Grape harvested in boxes of about 20kg and poured directly into the press for a soft and delicate squeezing. The must obtained is placed in thermo-conditioned tanks for static decantation, then sent for fermentation in stainless steel tanks at low temperature (18-20 ° C). At the end of fermentation, the wine is kept in contact with the lees until spring. At this point the cuvee is made by combining wines from the various selected crus. In spring the wine undergoes a second fermentation, that in the bottle, followed by a process of maturation on the yeasts, in the cool, dark and protected environment of the cellars, in compliance with the most rigorous rules of the Classic Method Spumante. It may contain sulphites. Alcoholic content: 12.5%.
